The tandoor is typically ordered as either a dedicated Charcoal model or a dedicated Gas-operated model with a burner. However, hybrid models that allow the use of gas to maintain temperature while charcoal provides smoke can often be customized upon request.

Yes. Due to the extremely high heat and the smoke produced (especially with the Charcoal model), the Drum Tandoor must be placed under a powerful, dedicated commercial exhaust hood with proper ducting and fire suppression features, as per local fire codes.
